Pigtail turners make it much easer to flip your meat without interfereing with any rub or outside coating you have added.
I first began smoking using in upright smoker which had a water bowl between the heat source and the food.

I liked the outcome, so now only smoke with a big pot of water in the mix.

Be sure to fill the pot with HOT water, otherwise it takes more fuel to bring your smoker up to tempreature and to keep it there.
